Chateau d’Ori (CDO) started by Ranjit Dhuru in 1999 produced its first vintage in 2007. Oenologist M. Athanase Fakorellis oversees the wine making process and cultivation of the vineyard. Chateau d’Ori produces six varieties which are Cabernet Sauvignon, Merlot, Shiraz, Sauvignon Blanc, Chenin Blanc and Chardonnay. CDO claims to have India’s first state-of-the-art winery that features gravity flow and a fully automated bottling plant.
Chateau d’Ori’s vineyard is located 22km from Nashik on the Nashik-Dindori road and makes up 65% of the 100 acre estate which features a farmhouse, a winery and three small lakes. 56 of the vineyard is planted using the single cordon method. This method can accommodate 2500 vines as opposed to the normal 1000 vines using the pergola method. Currently, CDO is one of only three wineries in Maharashtra with its own vineyard and possibly the only one to produce all of its wines using estate grown grapes.
Chateau d’Ori’s winery is located on the 100 acre estate and is a modern adaptation of winery designs found in the Bordeaux region of France. It is a large circular building that houses 72 large stainless steel tanks for fermentation and storage. The winery also features a laboratory, a 3000 bottles an hour bottling and labelling plant, a testing room, berries sorting room and a temperature controlled cellar which can house over 500 French oak barrels for fermentation and maturing of their high-end wines. It also has a tasting room with a glass front that offers panoramic views to visitors. The winery also offers paid tours and overnight stays.
